Figgy pudding - Christmas pudding

You maybe remember of the old Christmas song with that name. Figgy pudding is a spice cake-like souffle made with figs and walnuts. it's moist, delicious, and simple to make.

Figgy pudding is additionally known as Christmas pudding or plum pudding. it is a traditional English dessert that is truly a lot of cake-ish than pudding-ish.

  • 1 piece of brown construction paper
  • Construction paper scraps (white and green)
  • 2 red buttons
  • Glue stick

  1. Trace a circle onto a piece of cardboard or directly onto your brown paper. Make sure it is large enough to hold your gift card. I used a large cappuccino mug. Or, you can use the circle from the PDF template.
  2. Fold the brown paper in half and cut out circle using the cardboard or traced circle. This will make two circles. Put one circle to the side.
  3. With white paper, cut dripping cream sauce. Glue white cream on top of brown circle.
  4. With green paper, cut out two holly leaves. Glue both leaves on top of white cream sauce.
  5. Glue two small red buttons on each end of the green holly leaves.
  6. Place the white and brown paper circle on top of the plain brown circle. Using the plain brown circle, glue around the middle and bottom outer edge of the circle. Leave the top portion non glued so the gift card can slide through the top.
Place your gift card in its new holder. There you have it. Your very own figgy pudding gift card holder!

Mince Pie

Here could be a traditional mince pie recipe that actually have used for several years and sometimes bake through the seasons. The pastry is kind of short and needs careful handling and a bit extra patience. But, it's really soften within the mouth. Tastes of Mince Pie so much superior to regular short crust pastry. This crumbly, fruity mince pie recipe is a Christmas classic. Serve warm with lashings of brandy butter.

Ingredients for Making Mince Pie

  • 350g/12oz high quality mincemeat, preferably homemade
  • 200g/7oz plain flour, sifted
  • 40g/1½oz golden caster sugar
  • 75g/2¾oz ground almonds
  • 125g/4½oz unsalted butter, diced
  • 1 large free-range egg, beaten
  • milk, to glaze

Mince Pie Cook Methode

  1. Lightly butter a 12-hole pie or patty tin. Tip the mincemeat into a bowl and stir so that the liquid is evenly distributed.
  2. Place the flour, sugar, almonds and butter in a food processor and process briefly until resembling breadcrumbs, then slowly add the egg through the feeder tube. (Or rub the butter into the dry ingredients by hand and stir in the egg.)
  3. Bring the mixture together with your hands, wrap in clingfilm and chill for an hour or so. Thinly roll out the pastry on a floured surface. Cut out 12 circles with a fluted pastry cutter, large enough to fill the base of the prepared tin. Press gently into each hole, then fill with the mincemeat.
  4. Cut out another 12 slightly smaller discs and use to cover the mincemeat. Press the edges together to seal. Make a small slit in the top of each, then brush lightly with milk. Chill for about 30 minutes. Meanwhile, preheat the oven to 200C/400F/Gas 6.
  5. Bake the pies for 20 minutes until golden brown. Remove to a wire rack and serve warm.

Shepherds Pie

Ingredients for Making Shepherds Pie

  • 2 lb / 900g potatoes, peeled and quartered
  • 6 tbsp milk
  • 1 stick / 110g butter, cubed + 1 tbsp for the sauce
  • Salt and ground black pepper
  • 1/2 tbsp lard or dripping
  • 1 cup/ 115g chopped onion
  • 1 cup / 115g finely diced carrot
  • 1 clove garlic, minced
  • 2 cups / 450g ground/ minced lamb
  • 1 pint / 600 ml beef stock
  • 1 cup / 115g chopped white mushrooms
  • 2 tbsp finely chopped flat leaf parsley
  • 1 tbsp all-purpose flour
  • 1 cup/ 115g grated Cheddar Cheese

Shepherds Pie Cook Methode

  1. Heat the oven to 375°F/190°C/Gas 5
  2. Boil the potatoes until soft then drain into a colander. Place the milk and butter in the pan used to boil the potatoes, return to the heat and warm gently until the butter has melted. Add the potatoes and mash. Season to taste and keep to one side.
  3. Melt the lard or dripping in a large deep pan. Add the onion and carrot and fry for 5 minutes. Add the garlic and cook for another minute.
  4. Add the ground lamb and one-third of the beef stock to the onion and carrot mixture and cook, stirring constantly until all the meat is browned. Add the remaining stock, parsley and mushrooms, season with salt and pepper. Cover with a lid and cook for 15 minutes.
  5. Mash the flour into the remaining 1 tbsp butter then add in small pieces to the ground meat sauce, stirring until all the flour has dissolved and the sauce has thickened slightly, approx 5 mins.
  6. Place the meat sauce into an 8"X 3"/ 20cm X 7cm deep ceramic of glass ovenproof dish and cover with the mashed potato. Sprinkle the grated cheese on top of the potato and bake in the heated oven for 30 - 35 mins until the surface is crisp and browned. Serve immediately.
